A triple-bearing diabolo is actually a great choice for a beginner. The bearings let it spin significantly longer (up to ~20x longer than a fixed-axle model), giving more stability and time to set up, practise and land tricks. There is no part to convert a bearing diabolo to a fixed axle, and the fundamentals are the same either way. One key tip: make sure the diabolo is the right way around, as the one-way bearing only spins in one direction — usually the hub sits with the black base inward and white outward, depending on which hand is your dominant accelerating hand.
